I love making this dish! It is so quick and simple yet filling, delicious and nutrient packed! If you are looking to add some more fiber, vitamins and minerals to your diet, this dish is a great start. Sweet potatoes are a great source of fiber, vitamins and minerals. One cup of sweet potato (200g) with the skin contains:
- 180 calories
- 0.3g of fat
- 6.6g of fiber
- 41.4g of carbohydrates
- 65% DV of vitamin C
- 769% DV of vitamin A
- 50% DV of manganese
Since it is such of a good source of natural fiber, sweet potato is great at supporting gut health, and when the gut is well supported, the immune system can function at its best. Also, the beta carotene it contains helps in supporting healthy vision.
Spinach is great for restoring the body's energy levels and supporting bone health. I guess Popeye did know what he was doing after all. Spinach is also a good source of vitamins A, B2, C, K, Folate, Manganese and Magnesium.
To Create This Dish:
- Gather your ingredients( Fresh Spinach, 1 Sweet Potato per Person, Black Pepper, Curry Powder, Garlic/Onion Powder, Avocado Oil, Spring Water, Sea Salt)
- Wash your veggies ( I prefer to skin my sweet potatoes but it is not necessary at all)
- Chop your sweet potato into bite sized dices ( If you prefer to boil it first that is fine but take note that boiling time will be longer for a whole potato)
- Add 4 cups of spring water to a pot. Add in sweet potato dices. (Do not re-boil if you boiled before dicing)
- Add in spices ( 1tbs of curry powder, a sprinkle of salt, a sprinkle of pepper, 1/2 tsp of garlic or onion powder)
- Boil the mixture for 5 - 10 minutes ( sweet potato should be slightly soft but NOT mushy)
- Add avocado oil and sweet potato to a medium frying pan on medium heat (you may add more spices to pan if you would like for extra flavor, but not too much)
- Fry the sweet potato until the edges become crispy and browned (Don't burn yours like I did mine this time #LifeWithAToddler)
- Add in a few handfuls of spinach (when spinach cooks down, it will seem like a significantly less amount than what you put in. Don't be afraid to pack in as much as your pan will hold)
- Once, spinach begins to cook down, turn the heat down slightly to keep from burning the spinach (keep an eye on it at all times!)
- Stir constantly & allow spinach to cook down completely
- Serve and Enjoy!
